Ingredients
For the Bread Base
  • French rolls or bolillo bread (sliced in half lengthwise)
  • Butter to taste for toasting the bread
For the Topping/Filling
  • Refried beans (cooked beans, mashed into a firm puree and cooked in a skillet)
  • Good melting cheese (such as shredded or sliced mozzarella, Oaxaca, Monterey Jack, or semi-cured cheese)
For the Salsa (Pico de Gallo)
  • Ripe tomatoes diced into small cubes
  • Onion finely chopped
  • Fresh cilantro chopped to taste
  • Red chili pepper or jalapeño finely chopped and seeded (optional)
  • Lime juice, salt, and a drizzle of olive oil for seasoning

Instructions
  1. Prepare the bread: Slice the bread in half and hollow out a bit of the excess breadcrumbs if you prefer a deeper cavity for the filling. Spread a thin layer of butter on the cut surface.
